Scallions & Cheese Flatbread Recipe:
Ingredients:
3 and 1/4 cups bread flour (400g) or all-purpose flour
2 tsp instant yeast (6g)
1 tbsp brown or white sugar (15g)
1 tsp salt (4g)
1 cup warm milk (250ml)
1 egg
1/4 cup olive oil (60ml)
1/2 cup chopped scallions
4 cups shredded mozzarella
Parmesan cheese
Egg and Herbs (parsley, scallions, or basil)
Instructions:
In a large mixing bowl, combine the flour, instant yeast, sugar, and salt. Mix well to evenly distribute the dry ingredients.
Create a well in the center of the dry ingredients. Pour in the warm milk, beaten egg, and olive oil. Mix everything together until a sticky dough forms.
Transfer the dough to a floured surface and knead for about 5-7 minutes until the dough becomes smooth and elastic.
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
Preheat your oven to 425Β°F (220Β°C). Prepare a baking sheet lined with parchment paper.
Punch down the dough to release any air bubbles. On a floured surface, roll out the dough into a rectangle or any desired shape.
Transfer the flattened dough to the prepared baking sheet. Sprinkle the chopped scallions evenly over the dough, followed by the shredded mozzarella. Add some Parmesan cheese and sprinkle with herbs for extra flavor.
Crack an egg on top of the flatbread and gently spread it out to cover the surface.
Bake the flatbread in the preheated oven for about 15-20 minutes or until the crust turns golden brown and the cheese is bubbly and melted.
Once baked, remove the flatbread from the oven and let it cool for a few minutes before serving.
